Adding Apple Cider to our home grown menu

I built an Apple grinder to pulverize the apples for pressing.









I was lucky to find free labor in the area. She cut out all the worm holes and rot in the apples. I didn't see the necessity.







I pressed the apples using my hydraulic press.
With it I could put tons of pressure on the pulverized apples.

















We were able to get 8 gallons of Cider.




I fermented 6 gallons of Apple wine. This will produce 24 corked bottles.

Just Another Sous Vide Sunday

Sundays are a special time at the Russell place, now that we are cooking with science. Today, we put a modern twist on a backyard favorite: hamburgers! There are myriad recipes for sous vide burgers, so I followed the first one after a Google search. The results are shown here.



The texture here is phenomenal. In spite of the very pink color, the texture was certainly not raw. The only way to describe it (as I have other cuts of meat in the sous vide) is smooth. To top it all off, it was super juicy. Once again, the sous vide box produced consistent and surprising results. As we continue our descent down the culinary rabbit hole, we'll keep you posted. Beautiful Liberal Northwest Washington State Posted and Private.

Here they  support President Obama and his Amnesty Program, and for the most part, Illegal Immigration. But By God! do not set one foot on their property. Everywhere I walk, the place is littered with these signs.

Family First but my 2nd reason for coming to Washington is of course the BERRY.
